Homemade rice pudding


 


Ingredients


For the sauce


Semi-salted butter: 10 g

Whole liquid cream: 10 cl

Vanilla pod (s): 1 whole

Powdered sugar: 80 g


For step 1


Whole milk: 1 l

Round rice: 150 g

Powdered sugar: 100 g

Egg yolk (s): 4 whole


Preparation


STEP 1


Wash the rice, put it in the boiling milk with the vanilla pod and 50 g of sugar. Cook for 30 minutes at low broth. Stir occasionally with a spatula so that the mixture does not stick. On the other hand, whisk the eggs with 50 g of sugar. As soon as the rice has cooked, add the eggs / sugar mixture and let cool to room temperature.


2ND STEP


In a heavy-bottomed pan, put the caramelizing sugar. When the color is red and homogeneous, add the semi-salted butter and the cream. Mix well.


STEP 3


Arrange the rice in deep plates and cover with semi-salted caramel.
